Sabrage is a technique of opening a bottle of champagne or other sparkling wines using a knife or sword, in which the top of the cork is removed in one sharp movement. The technique takes its name from the sword used by Napoleon Bonaparte’s French knights, called a “sabre”, and involves using the blade to break the neck of the bottle, rather than opening the cork with a corkscrew. Sabrage is often used on special occasions and ceremonies, such as weddings and parties.
